What is the difference between long grain cutting boards and end grain cutting boards?
Traditionally butcher blocks are end grain. The end grain is what you are looking at when
you look at the face of the cutting board. End grain is much easier on your knives being that
the sharp edge of the knife between the grain fibers without cutting the fibers. Long grain
cutting boards have the fibers going the length of the cutting board and the fibers are cut by
the knife edge. Long grain cutting boards won't last as long and will require resurfacing more often.
As an example of price, a long grain cutting board that is 3/4" * 12" x 18" will run from $100 - $150 depending on what wood or woods it is made from. End grain cutting boards are thicker and are much more difficult to make. An end grain cutting board that is 2" x 12" x 18" would start at $200 and go up depending on the woods and the complexity of the design.
